    The most delicate of teas, so beautiful as to even be written about in poetry, white tea is the purest and least processed form of tea. Therefore, its naturally high levels of antioxidants are preserved. But what exactly does this mean?

    Antioxidants are known for helping our bodies greatly. Because the process that white tea undergoes during its creation is shorter and more simplified than those of other types of tea, it is able to keep a greater amount of these antioxidants.     What is White Tea?

    White tea is extracted from the buds of the tea plant and harvested prior to the plant's full leaf opening. This results in buds coated in a fine, white fur-like material, lending itself to the name "white tea." Even today, most white tea is harvested by hand, its buds picked and laid out to dry manually. It is a meticulous process but one that is highly worthwhile, yielding quite satisfying results.  

    These buds are then dried carefully so as not to allow the tea to oxidize for an extended period of time. The buds intended for white tea do not go through any manual oxidization either, as the intent is to have the least amount of oxidation possible go into the creative process for white tea. 

    This is what sets white tea apart from other teas, which are allowed to oxidize for longer, such as green and black tea. The minimal process of harvesting white tea leads to its fresh flavour and a light tasting experience.
